In the heart of Saint-Chinian appellation in Languedoc, ST Cels is more than a vineyard. It is a “family story”
With its 80 ha it enjoys an exceptional terroir. Nature offers us all the components necessary for a fabulous alchemy.
A diversity of soils: schistous hillsides, limestone-clay valleys around Castelbouze, and rolled pebbles along the rivers of Touloubre and Vernazobre. A priviledged Mediterranean climate, hot and dry summers, tempered by the freshness of the nights. This large thermal amplitude favours an optimum maturation The Tramontane, a dry and cold north wind naturally maintains healthy vines
« Sous les pins » evokes the typical Mediterranean landscape of Saint Cels with its Alep and “Parasol” pine trees which give such a pleasant shade under the summer scorching sun .

The vines

Varieties: Duo blending of Grenache, Syrah
Terroir : On the schistous hillsides and limestone-clay valleys
Vine management : Sustainable practices we are currently under organic conversion process. Composted pomace amendment, crushed canes, ploughing, trellising to guarantee optimal sun exposure, cordon de Royat pruning with 2 buds. Meticulous and daily work in the vineyards allows us to obtain high-quality grapes healthy and ripe.
The average age of the vines is 27 years
Yield : <45 hl / ha

The cellar

Harvest : The different grape varieties are vinified separately to respect the individual characteristics of each grape variety, and capture the best balance of our terroir. The grapes are harvested when they have reached an optimal maturity.
Vinification: “Sous les pins” is a bled rose crafted by drawing off the grapes during the vinification of red wines., short skin contact (a few hours) delivering many aroma precursors in the must then racking. Must settling and fermentation in vats under temperature control (16°C) for 2 weeks.
Ageing: : ageing on fine lees in vat for 2-3 months. Light filtration on earth after accurate fining before bottling. Quick Wine bottling to preserve its fresh aromas.

Tasting notes

Clear and star bright, Very pale apricot pink.
Nose is immediately marked by delicate, heart-liftingly pretty aromas of jasmine, mandarin and
bergamot. Then surprisingly smoky on the palate and dry, on a tart strawberry core. Elegance, balance and harmony characterize this duet blending. Enjoy it with all the moment of conviviality, casual or formal, it will entice your guests

Ideal as an aperitive but also with marinated ribs and its grilles vegetables (pepper, zucchini, eggplant) or a tomato salad, mozzarella, arugula and croutons
