THE VINEYARD

Domaine de Saint-Cels is located 30 km west of Béziers in Languedoc in the heart of the Saint-Chinian appellation.
Like a patchwork, our vineyard of 80 ha extends on the villages of Saint-Chinian, Murviel les Béziers and Assignan, thus offering a great diversity of soils limestone-clay, sandstone, schist and rolled pebbles, together with a large panel of grape varieties Grenache, Syrah, Mourvèdre, Cinsault, Carignan for the reds and Chardonnay, Roussanne, Colombard, and Vermentino for the whites. Our oldest vines were planted some 40 years ago.

We enjoy the warm and dry Mediterranean climate but also a certain freshness due to the altitude between 100-350m. Our plots are mostly on hillsides allowing the best exposure conditions

The vegetation between pines and “garrigue” completes this landscape.

Like musical notes, all these  natural elements typical of the Languedocian terroir allow us to compose a rich and varied range of wines

Here the word “Terroir” carries a  strong  identity.

Ploughing, seeding of vegetal covers, trellising, leaves thinning
Treatments in conformity with organic farming requirements,  sexual confusion to protect against the worm of the cluster
Mechanical harvesting

Vinification : Destemming, crushing and direct pressing. Then fermentation in enamelled steel vats at low temperature. racking with care and pressing of the musts.
Ageing : in vats on lees or oak barrel.
Wines preparation : accurate fining and filtration on earth
Vinification : Destemming, partial crushing. Rosé wine is obtained by draining a few hours after harvesting. Maceration is really short under temperature controlled in order to get a pale colour and preserve aromas. Fermentation in enamelled steel vats

Vinification: Destemming, partial crushing then traditional vinification (maceration during 2-3 Weeks) in stainless steel vats with pumping over. Alcoholic and malolactic fermentations happened in vats. Racking.with care Ageing :
